Application of sodium bicarbonate NaHCO3 in food industry

The main ingredient of baking powder, besides sodium acid pyrophosphate, is sodium bicarbonate or baking soda, which constitutes up to 30% of baking powder. When these two ingredients are put together in the dough, it produces CO2 gas (carbon dioxide). This gas increases the volume of bread, cake and cookie dough.
